Lately I have been bitten by the bread bug again. Ever since Lil’ C started school, I have had more free time to bake again. One of the item on my to-try list is a square sandwich loaf baked in a pullman pan. I’ve always loved the texture of the shokupan (Japanese sandwich bread) that I get from the Asian grocery store here. The closest recipe that I could find was one for the Hokkaido Milk Loaf. I had to tweak the recipe a little to fit into the pullman pan that I had. In the end, it was semi-successful! The shape turned out great. The only problem I had was that the insides were not fully cooked. The next time I will to have to increase the baking time a little. Oh well, back to the drawing board for now.
