For Chinese New Year this year, I only baked a few very simple goodies. Originally I wanted to make pineapple tart, unfortunately the poor pineapple ended up in the tummy of the spouse & kid before I could get to it! : ) I guess no pineapple tart this year.
Anyway, here’s one of goodies that I made this year for Chinese New Year – the Honey Cornflakes Cup. This is a pretty common Chinese New Year snack but I added a little twist to it by adding almond and dried cranberries to it, and finally decorating it with a little sprinkles.
Honey Cornflakes Cup
40gm butter
2 tbsp honey
1 tbsp sugar
2 cups cornflakes
1/2 cup almond flakes
1/2 cup dried cranberries
Method:
- Melt butter, sugar & honey in a pot over low hear till it’s all melted and the sugar has dissolved. Remove from heat.
- Add in cornflakes, almond & cranberries and mix till well-coated.
- Scoop mixture into mini baking cups.
- Bake at 350 for approximately 5 – 7 minutes. Remove & cool.

Ah yes…good ol’ CNY cookies with a twist! That sounds very HEALTHY, you know… I miss pineapple tarts!

Tried the recipe but the cornflakes wasn’t as expected…
I realized that after 1-2 days, the cornflakes turn soft…
It’s a real disapponitment n waste of effort.
