Butter Cookies

Ever since my little helper started “helping” me in the kitchen, I’ve been trying to make things that she can help me without messing up. :) So last week, we decided that we would like to make cookies. I decided to use the butter cookies recipe from here.

These were the cookies before going into the oven. The little one had so much fun helping to cut out all the shapes. Notice how some of the cookies needed a little patching up? That’s ‘cos the little one got a little impatient and tried to do it without my help :P

They turned out really good! Great for tea-time. I had to stop the little helper from eating them while still hot! :)

Mango Chicken

Got a tray of mangoes from Costco last week and surprisingly, they were pretty good. Anyway, since I had lots of mangos, I tried out a Mango Chicken dish that I saw in the recipe book.

Mango Chicken

Verdict: It was ok. I think I should have used fresh orange juice instead store-bought OJ ‘cos that made the sauce a little thick.

Edited to add recipe: (sorry for the long delay.)

2 pcs chicken thigh
mango - shredded
onion - shredded
red chili - shredded

Marinade for chicken:
1 egg
1 tsp ginger juice
1 tsp salt
1/2 tsp sesame oil

Ingredients for sauce:
250ml fresh squeezed orange juice
1 tbsp plum sauce
1 tbsp chili sauce
2 tbsp lime juice
2 tbsp sugar
1/2 tsp salt
corn flour for thickening

1. Marinade the chicken thighs for 3 hours. Coat with corn flour and deep fry till golden brown. Drain & cut into small pieces.
2. Mix all sauce ingredients together and bring to a boil. Thicken with corn starch slurry. Add in the shredded mango, onion & red chili. Mix well & pour over chicken. Serve while hot.

Corn Potato Soup

Don’t you just hate it when you have just 1 piece of fruit or vegetable leftover? It’s usually too little to make anything substantial. Well, I had 1 corn!! Too little for the family to share and I’m too lazy to go to the store to get more. So, what did I do? Made a corn and potato soup for the toddler! Just a simple soup with corn, potato, chicken stock, heavy cream & topped off with some bacon. Simple & delicious! : )

Memory Walk

Did you know that more than 5 million Americans have Alzheimer’s Disease? Alzheimer’s is also the 7th leading cause of death in the U.S. So, what exactly is Alzheimer’s Disease? It is a brain disorder that gets worse overtime. Typically, the first symptom of Alzheimer is forgetfulness. Then as the disease progresses, other symptoms like confusion, changes in personality and behavior, trouble with organizing and expressing thoughts become apparent. There is currently no cure for Alzheimer’s disease.

The Alzheimer’s Association Memory Walk is the nation’s largest event to raise awareness and funds for Alzheimer care, support and research. Each year, volunteers of all ages team up with the Alzheimer’s Association to become champions in a fight against Alzheimer’s. A typical walk is a 2-3 mile walk and currently there are walks in more than 600 communities.

You can do your part by starting your very own team and start fundraising for the cause. If you are unable to participate in the walk, Memory Walk is also looking for Team Captains now! As Team Captains, you don’t have to walk. All you have to do is to rally walkers and motivate them to raise funds and awareness for the cause. If you are interested to become Team Captains, please sign up early to ensure you have enough time to recruit a team and raise funds for the cause! There are also other volunteer opportunities like event planning and local event committee to help before and on the day of the Memory Walk.

This is the first time I’ve ever seen huckleberries. The name reminds me of Huckleberry Finn from the Tom Sawyer book. Anway, we got this in Oregon last month. It was pretty expensive at $7.50 a lb. But out of curiousity, I had to try it.
Verdict: It was pretty good. Kinda taste like blueberries.

Went over to Vancouver, Canada last weekend and look what I brought back!!!! : )

Bento Supplies

Loads of cute bento supplies!! I’ve been on a lookout for nice bento supplies for a long time. Actually they do have some really nice ones here in Uwajimaya but they are all very expensive. Too expensive for me, anyway! :(

While we were in Canada, I was so excited to see a Daiso store which is kinda like the Dollar store. Daiso Canada was more of a 2 Canadian dollar store. Anyway, still cheap, right? So I went on a spree & grabbed a whole basketful of stuff!! hehe…. The toddler was also helping herself & putting stuff into the basket. She also wanted everything since they’re so colorful & cute! What can I say, like mother like daughter…..haha…

Look what else we found? Bak Kua, Singapore style! We only bought a little since we couldn’t bring it back over the border. It was ok, not as good as those back home. Just a little drier than what I like. Oh well, better than none, I guess. : )
