Blog Makeover!

What do you think of my blog makeover? : p I EFNTD, so I started messing around with the templates and finally came up with my own!! haha…. Roti Canai

How many ways can you eat Roti Canai???

So what is your favorite way to eat roti canai?? : p

Recipe:
Ingredients:
400g all purpose flour
40g butter, cut up into small pieces
1/2 tsp salt
3 tablespoon condensed milk
1 egg
3/4 cup water - adjust accordingly to your environment and flour
oil for soaking and shapingMethod:
I used the easy way out & put everything into my breadmaker. Then remove and form into balls. Soak the balls of dough in oil for at least 4 hrs or more. Take a ball and place it on a well-oiled surface. Start stretching the dough as thin as possible, taking care not to make any holes in it. Once thin enough, sprinkle some oil on top or in my case, some egg & onion before folding it up into a square. Pan fry till brown.

Got tagged by Cooking Momster for my favorite food. Hmm.. that’s a real toughie!! How to choose a favorite when there’s so many yummy food out there?? : ) Since I have to make only one choice, I would have to say my favorite food is probably a bowl of steaming hot Clam Chowder with a loaf of freshly-baked baguette.

Took this pic from my March post since I haven’t had the time to visit my favorite chowder store Pike Place Chowder lately. A lot of places sell Clam Chowder but what makes this Clam Chowder different is that it is loaded with clams and assorted vegetables. Some Clam Chowder I’ve eaten is more like potato soup with a clam or two. According to their website, they have won quite a few awards for their Clam Chowder.

This is also one of Lil’ C’s favorite food. When we first moved here in the middle of the cold winter and was staying in downtown Seattle, we used to walk to Pike Place Chowder at least 2 or 3 times a week to buy the chowder. The hot chowder was such a comfort in the cold days. But now that we’ve moved away, we haven’t been able to do. Will definitely have to find the time to go & get some of these chowders one of these days.

I think most people have already done this tag. So I’m just gonna tag these beautiful ladies. Would like to know what you like to eat in your part of the world!

Key Lime Tart

This recipe is for the Key Lime Tart I made for the Strawberries Galore .

For Crust:
Ingredients:
1 cup graham cracker - crushed
5 tbsp melted butter
3 tbsp sugarMethod:
1. Mix everything together & press into tart mold.
2. Bake at 350F (180C) for 8 min.
3. Remove from oven & cool.

For Key Lime Filling
Ingredients:
3 egg yolks
1 1/2 tsp grated key lime zest
1 14 oz can condensed milk
1/2 cup key lime juice

Method:
1. Beat egg yolk & lime zest together till creamy
2. Add milk & mix well.
3. Add lime juice & mix well
4. Pour the mixture into the baked crust.
5. Bake for 10 min. Top with whipped cream if desired.

Brownies

Ever had one of those days that all you want to eat is something chocolately?? Today I felt like that. So here it is, my chocolate fix - BROWNIES

To me, brownies generally fall into 2 categories. Either they taste cakey or fudgy. This turns out to be a really rich and fudgy brownie. Due to its richness, 1 piece was about all I needed! : ) The rest are now frozen in my freezer for my next chocolate craving day.Recipe for this brownie:

Ingredients:

1 cup butter

8 oz chocolate

1/4 cup brown sugar

1/2 cup castor sugar

2 eggs

1/2 cup flour

1/2 tsp vanilla

pinch of salt

3/4 cup toasted pecans

Method:

1. Melt butter & sugar together over low heat till butter has melted.

2. Add chocolate & stir till chocolate has melted and everything is well mixed. Remove from heat.

3. Add one egg at a time and mix well

4. Add vanilla, flour & salt and mix well.

5. Add pecans & mix well. Pour into a lined baking pan.

6. Bake at 350F for about 20 min or till brownies is set in the middle but still slightly soft.

7. Place immediately into freezer. When cold, remove & cut into small pieces & serve.

Fried Spring Roll

Made some fried spring roll yesterday. The filling is made up of shredded jicama, pork, dried shrimp and chinese sausage. Wrap it all up in spring roll skin and deep fried till brown. Unfortunately, a lot of my spring roll wrapper decided to open up during the frying process. Anyone knows the trick to frying the perfect spring roll????? : )

Teriyaki Salmon

Did you know that when salmon are ready to spawn, they go back to their birthplace to do that?? To me, that is so interesting! In their lifetime, they’ve probably travelled thousands of miles around the world. So how do they managed to find their way back? Smart fishes, eh? Anyway, I digress..back to food. : )

Using this recipe from Allrecipes.com, I pan-fried the salmon on high heat till a crispy crust forms. Then I glazed it with a little teriyaki glaze.
