Toddler’s 2nd birthday is coming up in Nov. Even at this young age, she already knows what she wants for her birthday - an Elmo cake!! So . . . . . . an Elmo cupcake is born. Cute huh? Elmo’s fur is done in buttercream while his eyes, nose & mouth are done with marshmallow fondant. Actually this is my practice piece before attempting the actual cake. Hopefully, the actual cake will turn out nicely : p

Thanks to a dear friend who generously shares the harvest from her garden, I am able to make this Malaysian kuih from fresh cassava (tapioca) instead of the dried-up cassava sold in stores here. Thanks FL!! : )Recipe:
Ingredients:
2 ½ cups grated cassava
1 cups sugar
1 ½ cup coconut milk
2 tbsp condensed milk
Method:
1) Mix together all ingredients in a large glass bowl and microwave on high for 1 minute at a time until mixture is thick.
2) Pour the mixture into a baking tray.
3) Place some pieces of butter on top
4) Bake at 375 for 45 min. Then broil it for 3-5 min to brown the top crust.

Simple fried noodles with XO sauce. XO sauce is one of my favorite sauce for frying rice or noodles, though it is used sparingly since it is quite expensive. For the actual ingredients in XO sauce, see this: http://en.wikipedia.org/wiki/Xo_sauce
