When C was younger and did not need to go to school early, I had plenty of time to fix a decent breakfast for her. But now she is in the regular school, we have to leave the house really early in order to make it to school on time. So nowadays breakfast is always quick and mostly on the run. Lately this is the favorite breakfast item in the house. It’s fast, easy, delicious and nutritious.
For this breakfast parfait, I used peach yogurt and blueberry yogurt and in between the yogurt are layers of homemade granola and raspberries. The homemade granola contains rice chef, oats, almond, craisins and dried pineapple. You can never get bored with the parfait because you can always layer it with different yogurt flavors, different fruits and even other granola mixture.
