When my niece visited a couple of weeks ago, she wanted to learn to make caramel. How can I say no to this request for this sweet addictive stuff, right? I remembered bookmarking a caramel recipe from Savory Sweet Life last year. I have always wanted to try it out and it was the perfect time to try it out. The recipe seems so easy and guess what, our first attempt was a total failure! Instead of caramelizing the sugar, ours crystallized instead. Lesson learned – do not stir ! Our mistake was that we kept stirring and there happened to be crystallized pieces stuck to the side of the pan. When even a tiny bit of crystallized sugar gets mixed in with the rest of the sugar, it crystallizes the whole thing.
Before we started a second attempt, we cleaned off the pan and made sure that it was totally dry and clean and there are no sugar crystals on it. Then we began. Before the sugar started boiling, I did swirl it around the pan a little but other than that, we didn’t stir the mixture at all. And before long, we had a whole pan full of yummy gorgeous caramel. The caramel turned out so good. We made caramel popcorn with our homemade caramel and I think I am never going to buy any store bought caramel popcorn again.
