Spicy Tortilla Soup

It is freezing cold here! For the past few days, we have been waking up to thick frost, icy roads and below freezing level temp. Thankfully there has no moisture otherwise I am very sure that they would have turned to snow! Anyway, with all these cold weather, all I want for dinner is something really warm and spicy tortilla soup is one hot dish that we ate recently. If you looked on the web, there are probably many different recipe version for this soup. It got confusing after a while but then I realized that basically one basic common factor between these recipes is a tomato-based chicken soup. Once you have that, just add in any vegetables that you like. I added in potato, carrot, kidney beans and celery. Topped it off with tortilla chips, sour cream , and cubed avocado before serving.

This soup looks great and I love hot soup when the weather is cold or it is raining outside. Stay warm wont you :)
