This recipe is for the Key Lime Tart I made for the Strawberries Galore .

For Crust:
Ingredients:
1 cup graham cracker – crushed
5 tbsp melted butter
3 tbsp sugarMethod:
1. Mix everything together & press into tart mold.
2. Bake at 350F (180C) for 8 min.
3. Remove from oven & cool.
For Key Lime Filling
Ingredients:
3 egg yolks
1 1/2 tsp grated key lime zest
1 14 oz can condensed milk
1/2 cup key lime juice
Method:
1. Beat egg yolk & lime zest together till creamy
2. Add milk & mix well.
3. Add lime juice & mix well
4. Pour the mixture into the baked crust.
5. Bake for 10 min. Top with whipped cream if desired.

Might try that one day….sounds like Lemon Meringue pie but without the meringue.
dr ve thru: yep, it’s like lemon meringue except that it’s a little richer ‘cos of the condensed milk.
